Our life is ultra-tomato-free and semi-dairy-free. So what do we do when there's a pizza craving?
Something like this:
On top of a thin crust, I spread a thin layer of roasted garlic (roasting whole garlic bulbs has become a "thing" for me lately). Next, I sprinkled a thin layer of mozzarella/feta cheese on 3/4 of the pizza. Then i broke out the diced, roasted onions and sauteed thinly-sliced broccoli stems (with olive oil, s&p, and a smidge of red pepper flakes). These get piled on top. Off to the oven it goes...!
That's Tuesday night cooking here in the bush of Uganda! Tai's dietary restrictions can be challenging, but most of the time I'm okay with that challenge. Most of the time.
